- Flake ice
The most natural form of ice is flake ice, which forms at a temperature just below zero degrees Celsius: it is therefore ideal for use on flat surfaces. The shard shape gives the ice a versatility and a great simplicity of use. Flake ice is suitable for all kinds of applications: fish counters in the better restaurant; buffet displays in hotels; frozen drink dispensers; display of fresh fruit and products; quick cooling of wine and champagne and so on.

CFS: Coaxial flaking system
Static evaporators cannot handle the natural form of flake ice. The best solution here is a vertical, cylindrical evaporator with a worm that extrudes the ice granules through an ice pulverizer. Scotsman has succeeded in perfecting its evaporator from solid stainless steel thanks to years of experience in applying the advanced technology of direct refrigerant expansion in ice production and in offering maximum durability and efficiency.
THC: Total Hygiene concept
There is no better food-safe material than stainless steel. The Scotsman machines consist of a stainless steel frame and side panels that ensure high durability against rust, smooth maintenance and maximum hygiene. The large and easily accessible areas for ice storage ensure that it is cleaned without difficulty.
LWC: Low water content
Ice cream with low water content. Recommended for all commercial applications with a high demand for ice, where slow-melting large ice cubes are combined with moisture exchange for the storage of more expensive, perishable quality products.
HWC: High water content
Ice cream with a high water content. Recommended for all applications where delicate products that are very sensitive to moisture loss should be stored.
Most models offer protection against bacterial growth thanks to the Agion® technology, whereby all plastic parts that come into contact with water are already antibacterially treated during the production of our machines.
PWD: progressive water drainage
The unique system for progressive water drainage from Scotsman. The solution for all your problems with the height and distance of the water drain. Place the ice machine exactly where it is needed, up to 15 meters far and up to 1.5 meters below the actual drain. This keeps your ice out of reach of algae and microbes that are usually present in stagnant drainage water.
